Taiwanese Minced Pork (Lo Rou Fan)
This is a very iconic and popular dish from Taiwan. Our Chef’s parents are born and raised in Taiwan and this dish is very near and dear to him, we highly recommend you try it! When it comes to this dish, it’s all about the sauce. Pork belly is simmered low and slow in a soy based broth with Asian aromatics until it’s fork tender. Each piece is then cut by hand until we achieve a fine texture that we then reintroduce to the broth. The result is something super delicious. Served with an egg that’s sat overnight in a light soy based marinade and accompanied with chilled pickled cucumbers.
